Linguini with Fresh Tomato and Shrimps

5 plum tomatoes chopped 5 cloves of garlic squashed
1/8 cup of olive oil ½ cup of chopped basil
1lb of wild-caught shrimp (peeled and cleaned) ¼ cup of white wine
½ cup of water or choice of stock Salt and pepper for taste
¼-½ cup of pasta water 3/4lb-1lb of linguini (cooked as directed)


  1. Heat pan, add oil, and sauté garlic until golden brown.
  2. Add chopped tomatoes, white wine, basil, and stock. Simmer for 6 minutes on low.
  3. Add shrimp and cook for five minutes.
  4. Cook pasta as directed, drain, and add to the pan. If needed add reserved pasta water at the end.
  5. Serve with hot pepper flakes.
