Ingredients | |

1/4 cup of unflavored breadcrumbs | 1/8 cup of butter (this is to coat the pan only) |
3 lbs Polly-O old fashion Ricotta | 6 whole eggs (room temp) |
1/2 cup sugar or (6 heaping tablespoons) | This is optional but can add 1/4 cup candied citrus fruit or orange peel that has been julienned to the mixture. |
Instructions:
- First, Preheat the oven to 350 degrees.
- Using an electric beater- whip eggs in a large bowl until fluffy.
- Add in Ricotta and then sugar.
- Coat butter lightly and thoroughly in an 8-inch springform pan.
- Add unflavored bread crumbs so it sticks to the inside of the springform pan. Shake out excess.
- Pour the simple mixture into a springform pan.
- Bake for one hour and then shut off the oven. Cover with a sheet of foil to prevent any burning or cracking and leave the cake in the oven for 10 minutes.
- Take it out of the oven and let it cool to room temperature.
- Enjoy with a Sprinkle of powdered sugar on top!
