Ricotta Cheesecake

1/4 cup of unflavored breadcrumbs 1/8 cup of butter (this is to coat the pan only)
3 lbs Polly-O old fashion Ricotta 6 whole eggs (room temp)
1/2 cup sugar or (6 heaping tablespoons) This is optional but can add 1/4 cup candied citrus fruit or orange peel that has been julienned to the mixture.


  1. First, Preheat the oven to 350 degrees.
  2. Using an electric beater- whip eggs in a large bowl until fluffy.
  3. Add in Ricotta and then sugar.
  4. Coat butter lightly and thoroughly in an 8-inch springform pan.
  5. Add unflavored bread crumbs so it sticks to the inside of the springform pan. Shake out excess.
  6. Pour the simple mixture into a springform pan.
  7. Bake for one hour and then shut off the oven. Cover with a sheet of foil to prevent any burning or cracking and leave the cake in the oven for 10 minutes.
  8. Take it out of the oven and let it cool to room temperature.
  9. Enjoy with a Sprinkle of powdered sugar on top!
